ingredients for the strawberry syrup

  • 1 cup fresh strawberries, sliced
  • 1 cup water
  • ¾ cup sugar

directions

  1. Combine the water and sugar in a saucepan and heat until simmering and all the sugar has dissolved.
  2. Place sliced strawberries in a mason jar or glass bowl.
  3. Gently pour the hot sugar water over the strawberries. Cover and let steep until cool.
  4. Once cooled, place all ingredients in a blender and puree until smooth. Run through a sieve to remove any fruit pulp. Store in the fridge until ready to use.

To assemble the soda floats

  1. Divide the cup of strawberry syrup into 4 ¼ cups. Divide the gelato into four ½ cup servings.
  2. Place 2 tbsp of strawberry syrup in the bottom of each glass, then add ¼ cup of ice cream (half the divided portion) on top of the syrup
  3. Add the remaining two tablespoons of syrup to each glass. Top with club soda until nearly full. Gently stir to combine soda and syrup. Add the last ¼ cup of gelato to each cup (this will 'float' on top) and top with whipped cream and a strawberry.
